Jenny Costa

Turning passion into business

Jenny started her business through her passion for avoiding food waste and desire to tackle the enormous problem that it poses globally.  Food production and waste is a huge contributor to climate change, and Jenny saw a situation so wrong that she wanted to make change.

More about Jenny

Jenny Costa is the founder of Rubies in the Rubble, an award-winning, sustainable food brand known for making great tasting condiments, but gooder.

She started making her first batches of relishes from surplus in 2012 and since then has been working with farmers and producers across the country to put surplus fruit and vegetables to good use.

Having been the first movers in building a food brand in the ‘anti food waste’ space, their range of ketchups, mayo and relishes have won numerous awards and are stocked across the country in stores including Waitrose, Ocado, Coop, Morrisons, Marriott, The Pig and many more.

Jenny graduated with an MA in Mathematics and Economics in 2008 before working in the city for two years. However, having always had a heart for sustainability and good food, she left in 2012 to launch the food brand ‘Rubies in the Rubble’.

Ketchup and mayos are their leading lines and to date they have saved over 380 Tonnes of surplus and 300 Tonnes of CO2 equivalent.

Rubies are on a mission to convert the nation and make a huge impact in reducing unnecessary food waste while they are at it.

What to expect

Here is Jenny’s story on how she started Rubies in the Rubble and how she grew it into the successful business it is today.
