Our latest Roaster’s Choice decaf offering comes from the Sierra Madre Mountain range in the region of Huehuetenango in the small municipality of Jacaltenango, Guatemala. Rio azul’s cooperative founded in 1967 produces some of the highest quality coffee coming out of the famed huehuetenango. Q’anil or it’s loose translation ‘under the stone’ takes its name from a famous hill in the region seen as the protector of Jacaltenango.

This coffee is decaffeinated using the CR3 decaffeination process. Raw unroasted coffee that is moistened with
water and put in a vessel with pressurised liquid carbon dioxide. The C02 circulates through the beans, drawing out the caffeine through precipitation. This process poses no health risk due to the lack of chemical usage involved and leaves the
compounds responsible for aroma and taste untouched with little to no effect on the flavour or aroma!
