The latest addition to our Roaster’s Choice Decaf offering is this Mountain Water processed Typica, Mundo Novo and Bourbon mixed lot from the Sierra Mazateca region of Mexico.
Mountain Water decaffeination is exclusive to Mexico with the pure waters from the highest mountain in Mexico, Pico de Orizaba, used to extract the caffeine from green beans. Firstly, the beans are steamed to make them permeable before being submerged in a tank of the mountain’s water.
During this, all the caffeine and flavour from the beans are extracted, before the water is recycled through an elaborate filtration system multiple times, removing up to 99.9% of the caffeine content but not damaging the aroma palette of the beans. Next, the caffeinefree water is added to the beans with the flavours being re-absorbed, before the green coffee is dried to the desired moisture content.
