Decaff Pistachio Paradise
This cake is perfect for afternoon tea. It’s light, moist and spicy and perfect with a cup of Decaffeinated Medium Roast. Plus, it’s very easy to make, doesn’t use any complicated ingredients and the purple and green of the pistachio nuts set off the mocha coloured icing and looks really tempting. Feel free to substitute the Decaffeinated coffee for any other roast & ground coffee, or even a teaspoon or two of instant coffee!
Ingredients - Remember to use Fairtrade products where possible!
For the cake
200g butter, softened, plus extra for greasing
200g caster sugar (Fairtrade of course!)
4 free-range organic eggs
3 tbsp strong coffee*
1.5tsp mixed spice
250g self-raising flour
For the filling
250g cream cheese
1 1/2 cups icing sugar (perhaps more if needed)
2 tbsp strong coffee *
60g unsalted pistachios, shells removed, roughly chopped
* Either make up some strong Decaffeinated Medium Roast in a cafetiere or use a teaspoon or two of our Instant coffee mixed with a little boiling water.
